Summary

The endogenous lipase activity in five goat breeds of southern Italy, the Maltese, Ionica, Siriana, Girgentana and Garganica, was investigated. The lipase activity (10 goats and 3 records for each breed every 10 days in the middle of lactation) was measured by the method of Hubert et al., 1997. The lipase activity in Siriana milk (0.092) was significantly lower than in other breeds (0.103 Maltese, 0.115 Ionica, 0.127 Girgentana, 0.133 Garganica). The milk production and chemical composition explain lipase activity in Maltese, Ionica and Girgentana breeds but not in Siriana and Garganica breeds.
