Summary

Homozygous (AA and BB) and heterozygous (AB) genotypes were considered for Î²-Lg and the ewes were divided into 3 groups of 15 ewes (AA, AB and BB), according to lambing date, lactation number, milk yield, diet and Î±_S1-CN genetic variants. The bulk milk from each group was analysed for chemical composition and processed into uncooked mini-cheese (21 cheesemakings in total). Concerning the milk composition, the results showed statistical differences (P<0.01) for dry matter and fat that were higher in AA milk, while AB milk showed a better casein to fat ratio than AA (P<0.01). Whey composition from cheesemakings was significantly different, the dry matter losses were lower (P<0.05) for AB processed milk, fat losses were greater (P<0.05) for AA processed milk and intermediate (P<0.05) for BB. Gross cheese yield was higher in AA milk (P<0.01) and intermediate in BB (P<0.01); even though the dry matter recovery rate was not significantly different in the three milks, it was higher in AA.
