RÃ©sumÃ©

Une Ã©tude visant lâamÃ©lioration du potentiel de production laitier et carnÃ© par voie gÃ©nÃ©tique a Ã©tÃ© rÃ©alisÃ©e et ce grÃ¢ce Ã des croisements dâabsorption de la chÃ¨vre locale avec des boucs de races Ã©trangÃ¨res Ã savoir lâalpine (France), la damasquine (Chypre) et la murciana granadina (Espagne). Ce travail a pour objectif la caractÃ©risation des laits caprins, produits par des races dâorigine et par des croisÃ©s, et lâÃ©valuation de la production laitiÃ¨re de ces chÃ¨vres pour pouvoir classer ce lait sur le plan qualitÃ© et quantitÃ©. La population locale a prÃ©sentÃ© lâextrait sec le plus Ã©levÃ©. La croisÃ©e alpine a donnÃ© la meilleure production laitiÃ¨re. Les diffÃ©rences au niveau structural et qualitatif entre lait de vache et lait de chÃ¨vre semblent expliquer la friabilitÃ© du coagulum du lait caprin . La microscopie Ã©lectronique a permis de visualiser les structures et la taille des micelles et des globules gras.
