Summary

The market for goat milk products (principally soft cheese, milk and yoghurt) in the UK has grown from a low base at 15% per annum between 1988-1998. Many goat farms with more than 200 milkers have been established. A gross margin costing scheme was devised in 1988 to allow farmers to compare the income available with that from other possible enterprises. The farm gross margin depends on the skill of the farmer but has been predicted for annual lactations of 500, 800 and 1100 litres in 1998 as a Gross Margin per Goat of £42, £115 and £173, respectively with equivalent Gross Margin per Ha of £273, £920 and £1644. Margins have remained constant in real terms since 1988 at a time of falling farm incomes in other sectors. Margins are poorer than those for dairy cows and milk sheep but better than those for beef and sheep. The capital required for goat farming is lower than for dairy cows and there are fewer barriers to entry into goat farming than for enterprises whose produce is in surplus within the EU. The method of calculating the gross margin and the causes for cyclic fluctuations in milk and livestock prices are discussed.
