Summary

The aim of this study was to evaluate the activity of plasmin, plasminogen and plasminogen activator in sheep milk in late lactation and the relationships between plasminogen activator system and milk composition. Milk samples were collected from 40 Comisana ewes on four occasions, 210 to 240 days after milking. At each milking, milk production was recorded and milk samples were analyzed for composition, SCC, plasmin (PL), plasminogen (PG), plasminogen activator (PA) activity and coagulating properties. PL was positively correlated with rennet clotting time (r=0.42) and negatively correlated with curd firmness ( r=-0.32). A significant positive correlation was found between PA and SCC. No significant correlations were found between PL, PG, PA and predicted cheese yield.
