Concernant la brebis, la composition du lait de mÃ©lange de demi-mamelle a Ã©tÃ© Ã©tudiÃ©e selon 3 niveaux de CCS (< 500 000, 500 000 Ã 1 million, 1 Ã 2 millions par ml). Parmi les diffÃ©rents paramÃ¨tres Ã©tudiÃ©s, des diffÃ©rences significatives ont Ã©tÃ© montrÃ©es pour le pH, les teneurs en lactose, en protÃ©ines solubles, en sodium, en potassium, en calcium soluble, ainsi que pour le rapport casÃ©ines/protÃ©ines. Concernant lâaptitude Ã la coagulation (Formagraph), les diffÃ©rences significatives observÃ©es pour R et K₂₀ au pH initial du lait disparaissent aprÃ¨s standardisation du pH Ã 6,5. Aucune diffÃ©rence nâa Ã©tÃ© notÃ©e pour le rendement fromager et les coefficients de rÃ©cupÃ©ration. Concernant la chÃ¨vre, les caractÃ©ristiques des mÃ©langes de laits individuels triÃ©s en fonction de leur CCS (< 700 000 et > 1 800 000/ml) ont Ã©tÃ© Ã©tudiÃ©es. Des diffÃ©rences significatives ont Ã©tÃ© mises Ã lâÃ©vidence au niveau de la fraction protÃ©ique (teneurs en Immunoglobulines G et en protÃ©ines solubles, rapport protÃ©ines solubles/casÃ©ines) de la fraction minÃ©rale (teneur en sodium et chlorures), ainsi quâau niveau des activitÃ©s lipasique et phosphatasique et de la population en Staphylococcus aureus. Aucune diffÃ©rence significative nâa Ã©tÃ© observÃ©e au niveau de lâacidification et du rendement fromager.
