The Irish hotel sector has experienced considerable changes in the past few years however changes in buying processes do not seem to have changed apace. New research, which examined buyer behaviour in the foodservice market, reveals that the hotel sector in Ireland is not adopting supply chain management practices to the same extent as in the retail sector. It highlights in particular the key role of the chef in the buying process, indicates some difference in the buying processes of independent and chain owned hotels, suggests that a lack of formalisation exists in the buying process, particularly amongst independently owned hotels and argues that supplier rationalisation is not yet a feature of this sector.
