Summary

Five breeds, the Alpine, Maltese, Ionica, Garganica and Derivata di Siria, reared in 10 farms in the South of Italy were chosen to study the interrelationship between levels of somatic cell counts (SCC) and breed and production system and between these and milk rheological properties. The correlation between breed and SCC has been significant (P < 0.001), but not so between this latter and the farm. Three breeds, the Alpine, the Maltese and the Garganica have shown 70% of their values to be below 1 million, whereas only 30% of the other two breeds were below such a threshold. The relationships between SCC and milk chemical and rheological characteristics have confirmed published data: milk production decreases with SCC increase, whilst fat and protein content increase.

Casein has not undergone significant variations, while all the rheological parameters of milk (RCT, K20 and A30) have been significantly influenced by SCC.
