Summary

Milk samples with low (<500,000/ml) and high (> 1,000,000/ml) Somatic Cell Count (SCC) were obtained from two groups of Sarda breed ewes. Milk was analysed for its chemical composition ( pH, titrable acidity, total solids, fat, lactose, TN, NCN, NPN, total and soluble calcium and total phosphorus) and rheological properties (Formagraph), and used for a laboratory scale cheesemaking. The milk of the two groups showed differences for pH (6.67 for group A and 6.53 for group B, P<0.01), titrable acidity (7.26 °SH and 8.27 °SH, P<0.05), lactose (4.63% and 5.02%, P<0.01), NCN (0.246% and 0.201% P<0.01), CN/TN (73.50% and 78.05%, P<0.01), NCN/TN (26.78% and 23.01%, P<0.01), soluble calcium (0.29 and 0.41, P<0.05) and total phosphorus (1.18 and 1.28, P<0.05). Rennet clotting time (R), rate of curd firming (K₂₀) and curd firmness (A_R) were significantly different (P<0.01). Fat and total nitrogen recovery were higher in cheese from low SCC milk (P<0.05). Fat (P<0.05) and TN (P<0.01) losses in whey were greater when a high SCC milk was processed. The 24^h old cheeses showed significant differences for WSN and NaCl contents (P<0.01), and WSN/TN (P<0.01); these values were higher for the cheeses made with high SCC milk. The ripened cheeses have not showed significant differences for chemical parameters and sensorial characteristics (triangle test).
