Transition of the Polish economy towards market system has initiated many discussions on criteria taken into account to assess the changes observed in all stages of food chain. One of the mentioned criteria is quality. There are many factors which contribute to the high quality of Polish agricultural products, i.e. clean environment, a considerable number of farms involved in agricultural production based on traditional methods with a relatively low usage of agro chemicals as well as animal production characterized by low intensity. The agricultural and environmental conditions in Poland, as well as biological variety are favourable for organic farming development. But such perfect picture can be disturbed by needs to achieve higher and higher economic efficiency in food chain. As a result there is tendency to develop more industrial methods of agricultural production and processing with development and extension of convenience and functional foods as an example showing follows the global trends. Such situation creates necessity to propagate suitable knowledge and information about effects and consequences resulting from the observed tendencies to enlighten consumers on the proceeded changes and show ethical approach to consumer interests. As an example we have in Poland the Try Fine Food Programme aimed to inform consumers of high quality food products. Concluding, the food chain should be assisted by chain of ethical activities. Moreover, it is proposition to create system of ethical assessment of all stages in food chain after the example of the HACCP (Hazard Analysis and Critical Control Point).
