This paper will focus on a key issue is current debates on efforts to improve farm animal welfare, namely consumer information. Labelling programmes have emerged as a central measure. Public opinion surveys were conducted in seven European countries (Hungary, Italy, France, The Netherlands, Great Britain, Norway and Sweden) in September 2005. The survey has been conducted as part of Welfare Quality (FOOD-CT-2004-506508), a research project co-financed by the European Commission within the 6th Framework Programme. A question on what kinds of information the respondents wanted gave very varied answers across the countries, both in terms of general wishes for more information and the types of information that they wanted. While Hungarians were not sufficiently informed about farm animal welfare, the Dutch seemed more disinterested to that question. The type of information requested also varied across the countries; while the Italian and the French respondents were in favour of a simple welfare assurance mark, the Norwegian and the Swedish were much less interested in such a mark, the other countries being in between. The paper will explore possible explanations to this variation. It will draw upon a theoretical understanding of food consumption as a matter of institutionalisation, where this institutionalisation is influenced organisationally and normatively by conditions on the consumer side as well as the by character of the food provisioning system, regulatory arrangements, etc. The paper will draw mainly upon the survey data, limiting the possible types of information to characteristics of consumption, but including also interaction in the market, trust in institutional actors, consumer agency, etc.
