Interest in ‘sustainable food’ has grown substantially in recent years; however, an official definition for sustainable food in the UK has yet to be agreed upon. Many frameworks rely upon the Brundtland report definition: ‘development which meets the needs of the current generation without compromising the ability of future generations to meet their own needs’ (World Commission on Environment and Development 1987). Drawing upon previous qualitative research and using the defining principles of sustainable food provided by ‘Sustain: the alliance for better food and farming’, this study seeks to assess consumers’ understanding of, and attitudes towards, sustainable food. Using a detailed structured questionnaire sent to 2,500 randomly selected Nottinghamshire (UK) residents, a response rate in excess of 33% was achieved. The questionnaire explored shopping habits, attitudes to sustainable food components (organic, fair-trade, local food and animal welfare), dietary intake, stated purchasing behaviour and demographic information. Analysis of the data provides novel findings into which sustainability criteria are prioritised by consumers when purchasing food. Moreover, analysis across demographic categories reveals insightful comparison of consumers’ attitudes, purchasing behaviour and dietary intake. Future research will seek to compare and contrast stated and actual preferences by comparing the population survey results to actual purchasing behaviour from supermarket data. Building on the population findings, in-depth case-study interviews will explore in-depth determinants of consumer views towards sustainable food.
