Traditionally farmers had specific values and norms. With respect to animals, soil, and the environment, they had action guiding moral beliefs and principles. Nonetheless, farmers recently have been accused by the public of having no morality, but instead relay on an economic evaluation framework to steer their behaviour. To understand this tension between the traditional values and the accusations, this paper introduces the distinction between farmers’ ethics and agricultural and food ethics. One can argue that farmers traditionally have norms and values that enable them to act morally in individual cases, while an increasing number of ethical issues in agriculture are beyond the individual level, such as the definition and interpretation of animal welfare, of sustainable food production or of nature and water management. Consequently, an individual case based ethics does no longer suffice for professionals in agriculture. Based on previous research into existing moral beliefs and values of farmers, this paper presents the notions of care and responsibility as key concepts for an agricultural ethics, which enables professionals in agriculture to deal with the ethical challenges entailed by sustainable food production.
