Food security has been a major theme for the International Union of Food Science and Technology (IUFoST) since its Budapest Declaration in 1995. In reviewing its actions, a proposal was initiated by IUFoST in 2007 that allowed the evaluation of related projects by similar global organisations. Participant observation was arranged for a sample of conferences that were scheduled by such organisations within the available timeframe of the proposal. Reports were made on each conference, its relevance and its possible involvement in the IUFoST strategic plan. A summary of the relevant points from each conference programme in relation to food security and the actions of food professionals is included here, as well as suggestions as to the value of collaboration or networking between IUFoST and the organisations cited. The lack of involvement of food professionals and representation of the food industry in many of the conference agendas or discussions is of concern.
