Abstract

Farmed cod differ in several respects from the wild cod. One observation is that muscle of raw, farmed cod appears to be softer and to lose its integrity faster than that of the wild fish. By using zymography we examined if these differences were due to differences in gelatinolytic activity between the farmed and the wild fish. Possible correlations between the content of trace metals in the muscle and the gelatinolytic activity were also investigated. The activity of matrix metalloproteinase – 2 (MMP-2) was higher in the muscle of wild cod then in farmed cod. High MMP-2 activity corresponded to low content of the selected trace metals and vice versa.
