Résumé

Les céréales sont riches en amidon et le passage de celui-ci dans l’intestin peut être modelé selon le type et le traitement des céréales, en conciliant les exigences physiologiques de l’animal, les performances zootechniques et les intérêts économiques. Le choix des céréales doit se faire sur la base de l’équilibre dans la ration entre les sucres solubles, les glucides lentement dégradables et les constituants pariétaux. Leur utilisation comme aliment pour les ruminants implique un apport adéquat d’azote, de minéraux et de vitamines, surtout lorsqu’elles sont associées à des fourrages pauvres tels que les pailles et les foins récoltés tardivement.
