Summary

Until the end of the nineteenth century, LFS in the “Basilicata” region was based on transhumance and animal raising was mainly oriented towards the production of working animals (bovine) and wool (ovine). Meat and milk were regarded as additional products. Although today there are very few migratory herds, the transition between the two systems was slow, uncertain and lacking in direction. This led to the disappearance of traction animals and wool without their replacement by a definite orientation towards milk and/or meat. This indecision has meant not only delays in the acquisition of innovative methods (genetic improvement, dairy technology, etc.) but in taking attention away from the product it has accentuated the sectorial approach, directed exclusively towards either alimentation or animals.

This process has resulted in uncertainty on the part of consumers regarding quality characteristics, a difficulty on the part of producers in offering special qualities and poorly developed technical extension services. In a research-development intervention in the Basilicata sheep system, we reversed the sectorial approach and setting out from the product we attempted on one hand to “attack” the factors which were underming quality and on the other to study typicality factors in regional cheeses. Obviously such a complex and unexplored system posed problems of method and competence. To avoid as many errors as possible we first provided specific training to the technicians taking part in the project. These technicians then undertook an investigation of the production techniques of sheep’s milk cheese, the factors determining its defects, the elements of differentiation within and between the various zones, in short a study of typicality factors. This research was followed by an intervention, on the part of extension service technicians, aimed at eliminating cheese defects and, on our part, by an interdisciplinary study of typicality factors. We have already concluded our research on types of rennet and we are working on grazing and several technological parameters. The principal results of this research development action are reported.
