Although UHT processing technology effected clear changes in Brazilian consumer habits, its impact on the dairy industries and on the supply chain agents is very complex and diversified. From the peculiarities of a technology that is controlled by a company that provides equipment, packages, and services, all associated with long-life milk production, a structured network of cooperation and interdependency emerges. In this paper, we use elements of a multi-case study strategy in order to characterize and analyze the strategic movement of the dairy industry in Rio Grande do Sul state, in its process of substituting pasteurization technology with UHT technology, and the impacts caused by this switch in the supply chain. The central element of the research is understanding the movement towards habit changes in milk consumption and understanding the decision-taking process underlying the technological changes in the dairy industry.
