A change in the entire slaughter process is proposed, so that the dissemination of CNS (central nervous system) material is avoided and/or reduced. The replacement of the penetrative stunning method with cardiac arrest stunning will prevent the risk of dissemination of brain particles into the blood, viscera and, possibly, edible parts of the carcass and will reduce the release of CNS material from the foramen magnum. Additional measures to the Regulation (EC) 1139/2003 regarding head handling and harvesting head meat and tongue are presented. Various alternative methods for the removal of the spinal cord and/or column are currently in commercial use. It is recommended to use the new version of the oval saw, now fully functional, which is able to remove the entire vertebral column while being left intact, including the spinal cord and all dorsal root ganglia. Also, special protection measures for the operatives should be adopted.
