The contribution describes the work of Codex Alimentarius in controlling the risks arising from chemical and microbiological hazards in the area of meat and meat products. Risk managers at the world-wide (Codex) level need to evaluate the risk that the hazard poses to public health, decide what appropriate action, if any, should be taken and implement the programs chosen to control the risk. While revising the Code of Hygiene Practice for Meat, the Codex Committee on Meat and Hygiene (CCMH) incorporates all latest advancements of food science and technology in order to prevent meat-borne hazards and protect the health of consumers.
