Following the outlines formulated in its ‘Whitepaper on Food Safety’ (European Commission, 2000; further commented by Daelman, 2002) the European Commission has issued various pieces of legislation in the past few years, that represent fundamental changes in Community food law. These changes are characterized by buzz words such as: ‘changing responsibilities’, ‘longitudinal approach (farm-to-table), improved traceability’, ‘risk analysis based’, ‘other legitimate factors’/’precautionary principle’, and ‘transparency’. EU-uniform general principles stipulated in the general food law and the associated laws referred to as the ‘hygiene package’ and to be applied in food control, imply that both food industry and the competent authority are challenged with new and wide-ranging tasks. In addition, this contribution deals specifically with the consequences of the new EU food legislation for both official veterinarians and veterinary practitioners. For the successful implementation of these laws, the cooperation of these professional branches with food producers will be of great importance.
