A constant collection of data on the prevalence of foodborne pathogens in different food items is essential to predict their impact on human foodborne infections. Especially major meat species (pork, beef and poultry) have to be analysed for thermophilic Campylobacter, Salmonella, Yersinia enterocolitica, pathogenic E. coli and Listeria monocytogenes (Schlundt, 2002). Besides determining the prevalence of a pathogen in a certain food to estimate effects on human health, virulence properties and antimicrobial resistance profiles have also to be taken into account. In a recent study, conducted in Austria, the prevalence of major foodborne pathogens was assessed in meat and their antimicrobial resistance profile determined. Transfer of antimicrobial resistance between pathogens was assumed on the basis of their prevalence in the same food and on common antimicrobial resistance genes and elements detected. Thermophilic Campylobacter were mainly isolated from poultry meat (51%). Although Salmonella is strictly controlled in poultry production in Austria, we nevertheless found 16% of poultry meat to be contaminated with Salmonella (Mayrhofer et al., 2004). Pathogenic Yersinia enterocolitica is only a minor problem in pork production in Austria (16%) and only in 3 beef meat samples – most likely cross-contaminated during meat processing - pathogenic Yersinia enterocolitica were found. Pathogenic E. coli (as confirmed by PCR of the stx1 and stx2 (shigatoxins) as well as the intimin gene) were found in beef only (5%). Whereas thermophilic Campylobacter, Salmonella and pathogenic E. coli were shown to have about the same overall resistance rate, Yersinia enterocolitica and Listeria monocytogenes food isolates were not found to be resistant to any of the tested antimicrobials. Resistances to quinolones and tetracyclines were found most often (Mayrhofer et al., 2004). Based on statistics, the transfer of antimicrobial resistance between different foodborne pathogenic species is likely to occur. However, accurate genetic determination of resistance genes and elements could not proof such a transfer of resistance genes in our study.
