Lactic acid bacteria (LAB) are known for their production of antimicrobial compounds, including bacteriocins or bacteriocin-like peptides. Bacteriocins are low molecular ribosomally synthesized proteins or protein complexes usually antagonistic to genetically closely related organisms. These substances are important in the control of food spoilage and pathogenic microorganisms. Their antimicrobial activity is affected by its level, type, number of microorganisms, condition of application, interaction/inactivation by food components, pH and temperature of products. The aim of this work is a study of antimicrobial activity and the bacteriocin production by Lactobacillus paracasei isolated from Pirot’s kačkavalj, a traditional dairy product from Serbia. Bacteriocin production was analysed during 36 h fermentation in MRS broth in order to determine the optimal time needed for the highest antimicrobial activity. Bacillus subtilis, Listeria innocua and Listeria monocytogenes were used as test microorganisms for antimicrobial assay.
