There is nowadays a considerable interest in the study of hydrolytic exoenzymes of Oenococcus oeni, specially on those that could be of value for winemaking process. The activity of these enzymes on wine substrates can impact profoundly the wine flavour and quality and also affect the winemaking process. The presence of exo-enzymatic abilities of indigenous O. oeni strains were investigated in strains isolated from must and wines. The occurrence of β-glucanase, β-glucosidase, cellulase, and lipase activities was assessed. Results showed that 93.1% of strains exhibited β-glucosidase, 66.7% lipase, 49% β-glucanase and 37.2% cellulase activity. These activities were present in both must and wine strains. The majority of strains possessed two or more enzymatic abilities and few lacked them. Hence, the heterogeneity existing within natural O. oeni populations represents an interesting and useful tool to be used for special technological purposes.
