Many studies carried out during the last decade indicate that organic adsorbents such as yeast cell walls can be added to contaminated food or feed to selectively bind mycotoxins. This binding allows the toxins to pass through the digestive tract without any negative effect on animals or carry over to edible animal products. An in vitro methodology was used to test the binding capacity of individual cell wall components of Saccharomyces cerevisiae. It was observed that β-D-glucans composed of linear chains of (1,3)-β-D-glucans and branched with (1,6)-β-Dglucans glucan side chains, are the main components involved in adsorption of mycotoxins in aqueous solution. The single-helix organisation of β-D-glucans with six units per turn and the molecular sites involving both hydrogen bonds and Van der Waals interactions between β-D-glucans and mycotoxins, were evaluated at the molecular level using NMR spectroscopy, X-ray diffraction and in silico molecular modelling.
