Fusarium verticillioides is the dominant fungus in maize grown in northern Italy; consequently, fumonisins are normally detected in maize at the mg/kg level. In 2003 a new problem arose in Italy: aflatoxins in maize and, consequently, in milk. The summer was extremely hot and dry, maize plants were drought stressed and crop cycle length was reduced. Aspergillus flavus should have been very competitive in this situation and, indeed, 75% of the samples analysed were found positive for aflatoxin B₁ (mean 4.4, maximum 154.5 μg/kg). The feeding of dairy cows with contaminated maize led to severe widespread contamination of milk. Actions suggested and adopted by farmers to reduce the problem included elimination of maize with a contamination level above 5 μg/kg from the diet, careful maize cleaning to remove broken kernels and dust, and diet supplementation with clay-based sequestering substances. Some cases of kernel contamination above the European Union limit for aflatoxins were also detected in 2004 and 2005.
