The expansion of the European Union and the globalisation of international markets have fundamentally changed the agricultural-industrial productive sector. These changes initially affected the large production industries but are increasingly also influencing primary agricultural production (rearing, cultivation, animal feed) as well as small production units (traditional and typical food products). The latter are numerous in certain European countries, particularly in Italy. Such a fragmented market that has different needs and is the result of very particular situations, complicates the ensuring of technical-health assistance and controls that guarantee affordable health safety for the consumer. Thus, a single information system needs to be created that can epidemiologically survey primary production, analyse food processing, give complete risk assessment and create an efficient control system for public health needs. An example for this approach is the SIVARS (www.siv-ars.it) system developed by the Italian Istituti Zooprofilattici Sperimentali, the research and service laboratories of the Veterinary national Health System in Italy. In this contribution we outline some examples of the existing and planned activities to show the potential of a system that, albeit still under construction, covers the whole food production chain.
