The overall objective of epidemiological research is to understand and subsequently control health-related problems at the population level. One of the objectives of the production of food of animal origin is to ensure that these products are safe for (human) consumption. It is generally accepted that safe food should originate from healthy animals, thus linking epidemiology and food production. Various aspects such as the general approaches used to monitor diseases and pathogens, the evaluation of diagnostic tests used within these monitoring programs, modeling approaches to simplify and further explore these complex biological systems, and (bio-)sensor technology that finds its way into various areas of health-status monitoring, are briefly addressed, and an attempt is made to critically discuss their respective values.
