A large number of non-Saccharomyces yeasts were isolated from grapes of Bobal variety and identified following physiological and molecular characteristics. Therefore, they were tested to determine the presence of Î²-glucosidase and Î²-xylosidase, activities and four isolates were selected. All enzymatic activities were induced by the presence of glycosides as the only carbon source in the medium which seems to be a characteristic of the yeast isolate and were characterized following different parameters of enological interest. Glycosidase enzymes show a high degree of tolerance to high levels of glucose and ethanol, making them of great interest to be used in enological procedure.
