Due to contamination in ready-to-eat salads by microorganisms, the aim of this work was to develop natural detergents with disinfection action to use against the growth of bacteria during pre-washing step in the agro-industries. Experiments were carried out by inoculating Escherichia coli (10⁸ cfu/ml) in fresh-cut lettuce and incubated at 25 °C. After 2 h, the samples were immersed into two different detergent solutions (DS) containing tenso-active compound, citric acid and lime oil (A: 1.0% lime oil and 0.5% of citric acid; B: 1.0% lime oil and 0.3% of citric acid) during 1, 5 and 10 minutes. The samples were withdrawn and evaluated to determine the reduction of E. coli colonies formed, after a sequential of dilutions (1:10) of the samples flasks, from which 100 μL were spread onto the MacConkey agar plates and incubated at 37 °C for 24 h. DS-A was the most effective on reducing E. coli, although the best sensorial and physical properties were determined by solution B. The findings suggest that washing fresh produce for 1 minute in a detergent solution containing citrus oil and citric acid reduces the pathogenic bacteria growth.
