Cyclodextrins are cyclic oligosaccharides composed of a varying number of glucose units, which are obtained by the action of cyclodextrin glycosyltransferase (CGTase, EC 2.4.1.19) on starch. The genus Bacillus is currently considered as one of the largest producers of secondary metabolites of microbial biotechnology, especially microbial enzymes. The concern with the environment leads to the viability of projects that promote the sustainability of industrial production system, because the food industry produces a lot of waste with high added value that can be reused in the development of means of production of various bioactive. Assays were performed CGTase production by Bacillus licheniformis (UCP 1021) through alternative means of formulating containing potato peel and whey. The tests occurred at 150 rpm orbital shaker, 37 °C for 84 h. The results high light the alternative medium A1 through presenting an enzymatic activity of 0.823 mol/mg of CGTase, and qualitative enzyme activity of 1.07 U/ml and the total protein concentration of 0.13 mg/ml.
