This study aimed to investigate the production of lipases and proteases by Bacillus licheniformis in the presence of whey, olive oil and Tween-80. The experiments were carried out in Erlenmeyer flasks (250 ml) with working volume of 100 ml, in triplicate, in the presence of the inoculum at 10% v/v (10⁶ cfu/ ml), at 150 rpm and 37 °C. A set of a full factorial design was carried out to investigate the effects and the interactions of the factors. The samples were collected, centrifuged and the supernatants used to determine pH and enzyme activities (lipases and proteases). Maximum yields of the two enzymes investigated were determined in different times of cultivation. The highest lipase activity was 100 U/ml for 72 h at pH 6.9 in the presence of whey 4 and 10%, regardless of the inductor (olive oil). The maximum protease activity reached 60 U/ml for 48 h at pH 7.6 in the presence of whey 4%. Lipases and proteases were produced concomitantly for 48 h of submerged culture of B. licheniformis whose hydrolytic enzymes are essential in biological treatment of whey. Consequently, B. licheniformis has potential application in biological treatment of dairy effluent due to the high content of lipids and proteins in this effluent.
