Whereas the ethical matrix has been pivotal for the development of food ethics from a juvenile to an adolescent sub-discipline, the dominance of this approach in food ethics forswears its development into a mature sub-discipline that could give decision-makers more practical guidance. Decision-support frameworks in food ethics face the double challenge of providing guidance in mapping and balancing values in the issue at hand. The equally brilliant and simple idea of the ethical matrix is to use a tabular format to meet the first mapping challenge. The crucial issue is the selection of appropriate headings for columns and rows in the table. The ethical matrix opts for principles and stakeholders. This is not the luckiest choice, since principles are not specified enough to result in meaningful conclusions, whereas including stakeholders is redundant in participatory applications of the methodology. It seems more fruitful to replace principles with more specified values like food security, economics, product quality, food safety, health, environment, animal welfare, fair trade and craftsmanship and to place these values in the rows of the table. Since decision-making in food ethics is a matter of choosing between options, it seems a good idea to include scenarios in the columns of the table. With these alterations of the ethical matrix, the methodology has developed all characteristics of the first stage in a multi-criteria mapping approach. Such a methodology could also provide guidance for the second balancing challenge of decision-support frameworks in food ethics.
