Cronobacter spp. have been associated with sporadic cases of neonatal meningitis, necrotising enterocolitis, septicaemia, bloody diarrhoea and brain abscesses in infants. Premature newborns with a low birth weight are the main group at risk. Cronobacter sakazakii has been recognized as the species most often associated with cases of illness. Although Cronobacter spp. are widespread in nature they are only isolated infrequently from a wide range of food and beverage sources. Powdered infant milk formula (PIF) is the only food source that has been epidemiologically linked to Cronobacter disease outbreaks. This chapter summarizes the genomic information currently available for Cronobacter spp., reviews their food-borne transmission, and discusses the physiological features influencing persistence in PIF and PIF processing plants and the growth/ survival in the reconstituted product. Finally, general guidelines/recommendations for a safe manufacture, preparation and handling of PIF are provided.
