The article analyzes the Peruvian market of charqui with especial focus on the market of Arequipa. The analysis had three objectives: These were (1) to identify volumes and production, (2) to determine characteristics of demand and (3) to identify commercialization systems and financial margins. The results indicate that the production of charqui is focused in southern Peru and in particular provinces of Azangaro, Yunguyo and Carabaya (Puno), Canchis and Espinar (Cuzco) and Arequipa (Arequipa). The total production is at least 443.4 MT/year. The main characteristics of the charqui are weight losses (65% as ”offal”) in its production from fresh meat and its sophistication, including further processing, according to the market to which it goes. The demand is diverse, because the main consumption is found in 11 cities distributed across coast, mountain range and tropical rainforest. It also derives from urban and rural types of population with consumptions of 30% and 60% respectively. Diverse systems of commercialization are evident according to origin and destiny of the charqui. The system of Arequipa is most complex. This is due to the importance of the city, firstly as a center of wholesale distribution for the production of Azangaro and Arequipa, and secondly, as supplier to other provinces which include Mollendo, Ica, Ilo and Moquegua y Tacna.
