The object of the work was to develop a system for determining the quality of the carcass of domestic South American camelids and to improve methods for their evaluation in the commercial market. Carcasses of twenty five 16-months old alpacas were classified by a subjective method of visual evaluation of the conformation of the leg muscles and rump. A range of five classes was used. These were: 1) poor; 2) normal; 3) good; 4) very good; and 5) excellent. The results demonstrated that the majority of the animals (84 to 96%) were within the classes 2 and 3 (normal). The conformation of the internal profile of the leg in alpacas presented the form of a closed “V” in class 1, which differed from those of class 3 in which the profile tended to form a “Y”, with slightly convex muscles. The classification for fat covering considered five regions each with five grades. The carcasses presented generally limited development of subcutaneous fat and there were none in classes 3, 4 or 5. The indices of compactness calculated by objective measurement of the ratio between carcass weight and length of carcass varied between 0.23 and 0.37. The ratio between rump width and length of leg varied between 0.40 and 0.49. The latter results indicated that the alpaca has a more lengthened than compact morphology. The relationships among these indices for compactness and the subjective classifications reveal that the most appropriate procedure in qualification is for the rump conformation, which was highly correlated (r = 0.61 and 0.57). Multiple regression models were developed in which the width of the tarsus (measurement F) and width of the rump were shown to influence the weights of leg and loin. The rump width had more influence than the length of the leg on the carcass weight and influenced positively the area of the muscle Longissimus dorsi. In contrast, the length of the carcass has a negative effect on the same muscle (P <0.05).
