Postharvest storage is a critical stage in the food supply chain, where fungal contamination and mycotoxin accumulation can severely impact food safety. This chapter explores the dynamics of fungal growth and mycotoxin production across various stored foodstuffs, including grains, nuts, dried fruits, spices, fresh fruits and vegetables. Focusing on the environmental conditions affecting mycotoxigenic fungi, we examine how temperature, humidity, and sanitation practices contribute to mycotoxin contamination in cold storage facilities, cereal silos, and household storage settings.

The chapter describes specific risks associated with each type of stored commodity, emphasising how inadequate control measures can transform storage environments into ecosystems that support fungal growth. We discuss storage practices and their role in inhibiting or encouraging mycotoxin contamination, with practical insights into how targeted environmental management can reduce these risks. Additionally, we address the challenges faced by developing countries, where limited resources and infrastructure often exacerbate contamination levels and increase the prevalence of mycotoxins in stored foods.

Finally, we consider the influence of climate change on storage-related mycotoxin risks, as fluctuations in temperature and humidity may further challenge storage safety across different regions. This chapter aims to support improved global practices and reduce contamination risks across the supply chain by synthesising recent findings and identifying knowledge gaps in storage-related mycotoxin management.
