This chapter addresses mycotoxin contamination in low- and middle-income countries (LMICs) and the anticipated challenges posed by climate change. It focusses on the “big five” mycotoxins: aflatoxins (AFs), ochratoxin A (OTA), fumonisins (FUMs), deoxynivalenol (DON), and zearalenone (ZEN). The first section examines each mycotoxin, detailing their impacts and reviewing recent research on their occurrence in food, feed, and biological samples from African and Asian countries. The chapter then explores the challenges in mycotoxin analysis specific to the Global South, such as lack of awareness, inadequate resources and infrastructure, weak regulatory frameworks, lack of standardization and good practices, absence of long-term monitoring plans, and the necessity for predictive modelling. Additionally, it discusses novel sample preparation methods and the analytical techniques employed for mycotoxin analysis, evaluating their accessibility, accuracy, and adaptability. The final section highlights the essential role of capacity building and technology transfer, identifying obstacles, current initiatives, and proposing strategies for sustainable improvements in mycotoxin management.
