Mycotoxins are heterogeneously distributed in almost all materials in which they occur. The nature of their production and associated fungal infection governs the heterogeneity of a material, as well as variation over time or geographical area. The heterogeneity of the unit of material being sampling (the “sampling target”) as well as variation in sampling targets over time or area will lead to variance of mycotoxin test results from replicate samples. This variance leads to uncertainty in the determination of whether the sampling target is compliant with mycotoxin regulations, or other specifications, as well as uncertainty in the characterization of the extent of mycotoxin occurrence. The variance, and uncertainty, can be reduced by proper sampling, that is, by using a rational plan that incorporates the correct tools and processes to sample the appropriate targets and maximize the mass of sample taken from the sampling target, by randomly taking a number of portions from sampling targets and combining them to form an aggregate sample, and by reducing the particle size of solid material prior to sampling or sub-sampling. Some work has been published on the performance of specific grinding and sub-sampling tools for certain commodities such as grains and nuts; other work has characterized the stages of the mycotoxin measurement process to identify where the greatest influence on variance in mycotoxin test results occurs. Overall, there are many areas for future work to improve sampling practises for mycotoxin measurements. The additional costs of this work will be lower than the savings in reducing uncertainty in mycotoxin test results and subsequent protection of consumer health.
