This chapter discusses the analytical techniques developed for mycotoxin screening and confirmatory analysis in food. From a technical perspective, we compare the advantages, limitations, and applications of different techniques, focusing on identification, quantitation, and throughput. Furthermore, a cost-benefit analysis shows that for the analysis of large numbers of samples, the LC-MS-based multi-mycotoxin approach is far more cost-effective than the conventional single-mycotoxin approach. Despite technological advances, the challenge in establishing a “fit-for-purpose” screening and confirmatory analysis still exists due to the complex nature of mycotoxin contamination in food.
