Ensuring the safety of food and feed, including effective monitoring of biological and chemical hazards like mycotoxins, is a critical challenge amidst the global increase in food production and trade. Mycotoxins, which are toxic secondary metabolites produced by fungi, contaminate crops both pre- and post-harvest, posing severe health risks such as carcinogenicity and hepatotoxicity. Their widespread presence necessitates stringent regulation and demands efficient, routine monitoring techniques. This chapter explores the roles of authorities and food industries in screening mycotoxins, emphasizing the need for rapid, portable, and sensitive detection tools that can be applied at various critical points along the food supply chain. It also highlights recent advancements in analytical tools and methodologies, providing insights into current research efforts aimed at developing integrated, accurate, and reliable mycotoxin screening solutions.
