Irrespective of how dietary fibre (DF) will be defined in individual countries and worldwide, standardized methods must be available to measure DF. There are 16 Association of Official Analytical Chemists International (AOAC Intl) methods to measure what is currently defined as DF and/or nondigestible carbohydrates. These methods incorporate one or more of these terms: total dietary fibre, insoluble dietary fibre, soluble dietary fibre, β-glucan, polydextrose, fructans, resistant maltodextrin, trans-galactooligosaccharides, resistant starch, methylcellulose and hydroxypropyl methylcellulose. While not endorsing any definition for DF, one purpose of this workshop was to review the AOAC Intl methods that could complement the proposed (2006) CODEX definition. Although individual countries may elect to use non-AOAC Intl methods for the measurement of DF, these methods are easily used in routine analyses, and the availability of these standardized methods for both national and international reporting and intake recommendations (to include claims) has worldwide acceptability. The workshop provided a discussion on the strengths and limitations of existing AOAC Intl methods, suggested ideas to improve the precision of these methods, and suggested new analytical methods of analysis. The need and potential for a comprehensive method or combined use of multiple methods, for all nondigestible carbohydrate, was presented and discussed. While DF has a complex chemical identity, there is increasing interest in associating DF with its physiological functions. Ideas for in vitro and in vivo methods to assess the physiological properties were presented.
