When considering the rearing of insects for food or feed there are many issues to consider. In this chapter, an overview is given of the insect species used for either animal feed or human food. A number of issues that need to be taken into account when farming insects are discussed. When initiating a colony of a particular insect species for mass-production, the founder population and the strain to be used are critical decisions. Further considerations include the substrate chosen as this material can come at price and impact the nutritional quality of the resulting insects. Rearing conditions and facility design have often been developed by trial and error, but are for that reason company secret in many cases. Insect welfare when rearing edible insects is increasingly becoming an issue, in particular now that emotionlike states of invertebrates seem to be possible. After killing the insects, protein, fat, and chitin need to be recovered while safeguarding food safety and high quality. Also the shelf life of insects or their by-products as food and feed need to be considered. To market edible insect products, a conducive legislative framework is needed and this is a major challenge for the industry. The creation of an enabling environment for the sector is decisive as well. Also strategies need to be developed to make edible insects a mainstream food item. With worldwide need to find alternative sustainable protein sources increasing, the interest for insects to be used either as food and feed is growing. The market prospects are very promising.
