Orthoptera have been a valuable food source for humanity for millennia. In the past century, farming of Order Gryllidae (crickets) first as bait and later as pet food became a common practice in Europe and North America. More recently there has been an explosion of small and medium cricket farms in Southeast Asia to produce crickets for human food. Some estimates put the number in excess of 20,000 independent facilities in Thailand alone. Given the increasing recognition of the value of insects as a source of food it is vital to establish and disseminate cricket farming best practices. Accordingly, this chapter begins by summarizing the lifecycle of crickets and describing optimal habitat design – this information is presented as the foundation for the development of a cricket farm. Further, the chapter offers guidance on how to navigate logistical considerations and operational trade-offs that prospective farmers will encounter when planning their approach to rearing crickets.
