Vitamin D is crucial for normal bone formation and has been linked to prevention of many chronic diseases. It can be produced in the skin by the action of sunlight or it can be absorbed from the diet. The intake of vitamin D from food is especially emphasized in the northern latitudes. However, the content of vitamin D in foods is generally low. Hence, many population groups in the world are in danger to get too low levels of this vitamin. Vitamin D is naturally present in only a limited number of foods. Eggs are an interesting source of vitamin D because their vitamin D content is strongly dependent on the vitamin D content of hens’ diet. Vitamin D vitamers like vitamin D3, vitamin D2 and 25-hydroxyvitamin D3 (25-OH-D3) are all transferred from hens’ feed to egg yolk with a clear dose response. However, the vitamin D3 increased egg yolk vitamin D content more effectively than vitamin D2. Vitamin D3 is also more suitable than 25-OH-D3 for egg vitamin D fortification due to safety and economic reasons. It is suggested that vitamin D3 enriched eggs could be a good alternative to ensure sufficient vitamin D intake in northern countries. For groups of hens receiving vitamin D3 ca. 330 μg/kg feed, egg yolk vitamin D3 content ranged between 25.3-33.7 μg/100 g. Hence, eating a 60 g egg would deliver about 5.2-7 μg of vitamin D3. This dosage is equivalent to six to eight times more than the intake from typical egg, and corresponds to 35-47% of the USA’s recommendation, 15 μg/d allowance. Hens also benefit from the extra vitamin D3. However, in Europe there are strict rules on animal feed requirements. The maximum content of the combination of 25-OH-D3 with vitamin D3 per kg of complete feedingstuff is ≤0.080 mg for laying hens.
