Recent achievements in science have changed our thinking about food. It has become increasingly clear that our diet plays a pivotal role in maintenance of our health and that an unbalanced diet can cause serious health-related problems. Considering the composition of the healthy diet it is necessary to mention that egg is a crucial part of it as a source of highly digestible and available amino acids, fatty acids, vitamins and minerals. It has been proven that egg composition can be manipulated to substantially increase concentrations of omega-3 fatty acids, vitamins E, D and folic acids, selenium and iodine. By producing nutrient-enriched eggs it is possible to improve diets of various categories of people, including children, elderly people, people with various illnesses, etc. Our research showed that consumption of vitamin E, carotenoid and Seenriched eggs by volunteers improved their antioxidant status and this was the background for a commercial application such eggs in Ukraine. A commercial company used to produce more than a million such enriched eggs daily and they were sold in major supermarkets all-over the country. It has been proven, that wild birds are producing eggs naturally rich in omega-3 fatty acids, vitamin E, carotenoids and Se. Therefore the egg enrichment with aforementioned nutrients is a return of eggs to the natural situation. Indeed, comparatively low levels of those nutrients in commercially-produced eggs are a reflection of the cheap chicken diets used for their production. Furthermore, scientific advances in the field of improvement of nutritive value of eggs put them into the category of functional food.
