Abstract

The endogenous antioxidant system of mammals keeps redox homeostasis in living tissues by neutralizing the pro-oxidative species generated as a result of energetic metabolism in mitochondria. Though much less known that immune system, the endogenous defenses are essential to protect cells and tissues against the chemical threat caused by ROS. The imbalance between such protective system and ROS generation leads to the oxidative damage to biomolecules, a biochemical process of impaired redox homeostasis known as oxidative stress (OS). The onset of this stress is manifested at different stages of the production cycle of livestock. The impact of OS on ruminants depends on the productive stage, physiological condition and age, among others, but it is typically manifested as reproductive disorders, impaired milk production, failed ontogenesis, and naturally, as poor meat quality. Since meat is one major product from ruminants, preserving its quality in terms of sensory properties (color, tenderness, juiciness, flavor), nutritional value (content in vitamins and other essential nutrients) and safety (absolute absence of biological and/or chemical threats) is crucial. On this regard, strengthening the endogenous antioxidant defenses of ruminants is feasible and highly recommended to guarantee animals’ productivity and welfare, and consumers’ acceptability of final product. Selenium (Se) is an essential micronutrient that plays a pivotal role in the endogenous antioxidant defense in ruminants.
