The aim of our investigation was to analyse possibilities of using ultrasound as a method for objectification of price of fattened bulls via estimation of valuable cut content. During the years 2000–2005, 483 bulls of seven breeds (Slovak Spotted, Slovak Pinzgauer, Holstein, Brown Swiss, Simmental and Charolaise) were fattened, measured by ultrasound and slaughtered. Results of detail dissection were used to evaluate the dependence of weight of valuable cut, weight of hot carcass and EUROP grading for carcass conformation obtained by dissection and assessment by ultrasound. The average class for carcass composition of all bulls was 2.706 (R^-). Weight of valuable cats was assessed by linear regression model with weight before slaughter and muscle thickness on the last thoracic vertebra as independent variables. No statistical differences were found out between weights of valuable cut obtained using both methods. Relative value difference was 0.088%, i.e. 123 g of meat. For modelling the dependence of response variable weight of valuable cut on carcass composition, coefficients of non-linear function (y = 19.5963 + 18.961x – 2.38542 x²; Iyx = 0.497995) were estimated. Maximum of this function for carcass composition was x_max = 3.974 and for weight of valuable cut assessed by ultrasound y_max = 95.74 kg. Similarly, coefficients of quadratic function (y = 57.1081 + 44.0243 x – 5.536796 x²; Iyx = 0.449525) were estimated for weight of hot carcass dependent on classification of carcass composition. Maximum of second function for carcass composition was almost the same x_max = 3.98. Maximum for weight of hot carcass was y_max = 95.74 kg. Calculated values for extremes of functions for classification of carcass composition (3.974; 3.98) reflect the present structure of the bull’s population in Slovakia.
