Video imaging of cattle carcasses is a new technique that predicts the weight of various carcass cuts and specifies the true market value of the whole carcass on the abattoir slaughter line. Based on the field results of over 30 000 slaughter bulls, heritabilities and genetic correlations across estimated cut weights in addition to other traits were estimated using an animal model. Compared to the low heritabilities of subjective European carcass grades, video image determined characteristics show moderate to medium heritabilities. This technique therefore is capable of significantly improving the genetic evaluation system in beef and dual purpose cattle and could be used on a routine basis in beef recording.
