We present herein the objectives and organization of the course ‘Transgenic Foods’ (4.5 ECTS), an elective in the Master Program of ‘Food Quality and Safety’, taught at the Faculty of Pharmacy of the University of the Basque Country UPV/EHU since 2006-2007. The objective of this course is to give students enough scientific information about transgenic foods so that, as food specialists, they will be able to have their own opinions regarding many aspects of the current debate surrounding these crops and foods. The lecture part of the course (3.0 ECTS) comprises 3 modules. Module 1 includes a detailed description of the conventional plant-breeding techniques used to improve crops, followed by the description of the molecular biology and genetic engineering techniques to make a transgenic organism (plant, and animal). Module 2 describes de science behind the transgenic crops authorized in Europe and in the United States, as well as those in advanced states of development expected to be commercialized in the near future. These 2 modules give the students the necessary scientific background to understand the similarities and differences between conventional and transgenic foods. Given the lack of specific knowledge most food technologists have regarding transgenic foods, these 2 modules are a must for students to critically examine ethical issues regarding safety, environmental and legal aspects which are often brought up in the current social debate. Module 3 discusses how safety is evaluated in the European Union, environmental, and legal aspects regarding authorization and labelling of such foods, all from the perspective of Jonas’ Imperative of Responsibility. In the laboratory part (1.5 ECTS), students get familiar with the cellular analytical techniques used in the food industry to determine the species of a food element and the identification of transgenic elements in foods.
